SLT Shoe Lace trick: just like the first step of tying your shoes; effectively reverses the position of the threads. Lock join To make a lock join, make your join the usual way, tension your chain, and pull on the chain thread to unflip your stitch; you will see an angular bend to the chain at this point.

As for the stem, depending on your skill level, you can make a chain or use sets of stitches (5 sets of the first half, 5 sets of the second half of ds) or a spiral one (by only doing one half of the ds.)
